DAIQUIRI


Daiquirí is also the name of a beach and an iron mine near Santiago de Cuba, and is a word of Taíno origin. The drink was supposedly invented by an American mining engineer, named Jennings Cox, who was in Cuba at the time of the Spanish–American War. It is also possible that William A. Chanler, a US congressman who purchased the Santiago iron mines in 1902, introduced the daiquiri to clubs in New York in that year.

Originally the drink was served in a tall glass packed with cracked ice. A teaspoon of sugar was poured over the ice and the juice of one or two limes was squeezed over the sugar. Two or three ounces of white rum completed the mixture. The glass was then frosted by stirring with a long-handled spoon. Later the daiquiri evolved to be mixed in a shaker with the same ingredients but with shaved ice. After a thorough shaking, it was poured into a chilled coupe glass.

The drink became popular in the 1940s.[citation needed] World War II rationing made whiskey and vodka hard to come by, yet because of U.S. President Franklin D. Roosevelt's Good Neighbor policy rum was easily obtainable because the policy opened up trade and travel relations with Latin America, Cuba and the Caribbean. The Good Neighbor policy, also known as the Pan-American program, helped make Latin America fashionable. Consequently, rum-based drinks (once frowned upon as being the choice of sailors and down-and-outs), also became fashionable, and the daiquiri saw a tremendous rise in popularity in the US.

Speaking of summertime cocktails, the Daiquiri is a citrusy sweet marriage of rum and lime.

2 oz. white rum

1/2 tsp. superfine sugar

1/2 oz. lime juice


Directions

Squeeze lime into a shaker, stir in sugar, then add rum. Shake well with cracked ice and strain into a chilled cocktail glass.

Ingredients

4 tablespoons olive oil
2 cups chopped leeks, white part only (from approximately 3 medium leeks)
2 tablespoons finely minced garlic
Kosher salt
2 cups carrots, peeled and chopped into rounds (approximately 2 medium)
2 cups peeled and diced potatoes
2 cups fresh green beans, broken or cut into 3/4-inch pieces
2 quarts chicken or vegetable broth
4 cups peeled, seeded, and chopped tomatoes
2 ears corn, kernels removed
1/2 teaspoon freshly ground black pepper
1/4 cup packed, chopped fresh parsley leaves
1 to 2 teaspoons freshly squeezed lemon juice




Directions

Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat. Once hot, add the leeks, garlic, and a pinch of salt and sweat until they begin to soften, approximately 7 to 8 minutes. Add the carrots, potatoes, and green beans and continue to cook for 4 to 5 more minutes, stirring occasionally.

Add the stock, increase the heat to high, and bring to a simmer. Once simmering, add the tomatoes, corn kernels, and pepper. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 25 to 30 minutes. Remove from heat and add the parsley and lemon juice. Season, to taste, with kosher salt. Serve immediately.

APPLE AMERICAN PIE - Recipe



APPLE AMERICAN PIE

INGREDIENTS

1/2 cup sugar
1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
6 to 7 cups thinly sliced peeled tart apples
1 tablespoon lemon juice
Pastry for double-crust pie (9 inches)
1 tablespoon butter
1 large egg white
Additional sugar



DIRECTIONS

In a small bowl, combine the sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat.
Line a 9-in. pie plate with bottom crust; trim pastry even with edge. Fill with apple mixture; dot with butter. Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry.
Beat egg white until foamy; brush over pastry. Sprinkle with sugar. Cover edges loosely with foil.
Bake at 375° for 25 minutes. Remove foil and bake 20-25 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack. Yield: 8 servings.

The Old Fashioned is a type of cocktail in which the primary alcohol is whiskey and is served on the rocks with some ice and is consumed  before dinner by people in general. The recipe was said to have been invented by a bartender at that club in honor of Colonel James E. Pepper, a prominent bourbon distiller, who brought it to the Waldorf-Astoria Hotel bar in New York City.


The Old Fashioned is a cocktail made by muddling sugar with bitters, then adding alcohol, originally whiskey but now sometimes brandy, and finally a twist of citrus rind. It is traditionally served in a short, round, tumbler-like glass, which is called an Old Fashioned glass, named after the drink.





The Old Fashioned is as classic as they come, and perfect for anyone who likes their whiskey drinks on the sweeter side.


Ingredients

2 oz. bourbon or rye whiskey
3 dashes Angostura bitters
1 sugar cube (or 1/2 tsp. loose sugar)
club soda

Directions

Place sugar in an Old Fashioned glass. Wet it down with Angostura bitters and a splash of club soda, then muddle. Add a large ice cube and whiskey. Stir, then garnish with an orange twist.

The best summertime macaroni salad! Just like what you remember eating as a kid but here it's made a little healthier with Greek yogurt in the dressing. It's layered with colorful veggies and sure to satisfy!

Ingredients

8 oz . dry elbow macaroni
1/2 cup Hellmann's or Best Foods Mayonnaise
1/2 cup fat free or low fat plain Greek yogurt
1 1/2 Tbsp white wine vinegar
2 tsp dijon mustard
2 tsp honey
Salt and freshly ground black pepper
2 steamed or hard boiled eggs , peeled and chopped
1 cup diced red bell pepper
1 cup matchstick carrots , roughly chopped
3/4 cup diced celery
1/4 cup diced red onion
1 Tbsp minced fresh parsley





Instructions

Cook macaroni in salted water according to directions on package (I added about 1/2 tbsp salt to the water).
Drain and rinse with cold water until completely cool. Let drain very well.
In a medium mixing bowl stir together mayonnaise, Greek yogurt, vinegar, mustard, honey, and season with salt and pepper to taste (start with about 1/2 tsp salt and 1/4 tsp pepper then add more salt after you've added the dressing to the pasta).

Add well drained macaroni to a large mixing bowl along with eggs, bell pepper, carrots, celery and onion (if you like to have some color over you salad I like set aside some of the veggies to sprinkle over the top).
Pour dressing over top, add in parsley and toss mixture to evenly coat. Serve or store in refrigerator up to 1 day.
